Ghee – 1 tsp
Spinach – 1 bunch
Chilli powder – ½ tsp
White sesame seeds- 1 tsp
Chilli garlic paste – 1 tsp
Soya sauce – 1 tsp
Garlic powder – 1 tsp
Honey or sweet chilli paste – 1 tsp
Step 1 :
Take a bunch of spinach – cut off bottom thick stems – soak, clean and drain the water. On one flame – In a steel vessel blanch/cook the spinach in little water. Enough to cover the spinach. Don’t use too much water as the nutrients get left behind. Let it cook until the spinach turns bright dark green and turn off the gas....
Step 2 :
Let the spinach leaves continue to cook in hot water or steam the leaves. On another flame -Take a teaspoon of ghee (or oil) in a pan- when it’s hot add a teaspoon of white sesame seeds and some crushed peanuts, a little red chilli powder and a little salt.
Step 3 :
Add chilli garlic paste – 1 tsp ( I have this in the fridge) – (big red chillies soaked in hot water and then pasted in a mix with garlic. If you don’t have this add – simple add chopped garlic. Sauté it – move it around so it doesn’t burn. The sesame seeds will turn light brown and that is fine. Add 1 tsp soya sauce if you want to.
With steel tongs / roti tongs pick the spinach from the vessel, let the water drip off and transfer it into the pan and keep turning it around so it gets coated with sesame seed/ garlic and chilli powder. Add a tsp of honey or sweet chilli paste ( available bottled) on top. That’s all – Serve!
