Ingredients list

Gram flour (besan): 1 cup
Lemon juice:1 tbsp
Sugar:1 tbsp
A pinch of salt
A pinch of turmeric
Water (to make batter)
Baking powder: 1 tbsp (dissolved in water)

For the Tadka:

Oil:1 tbsp
Mustard seeds:1/2 tbsp
Dried red chili: 1
Curry leaves: 7-8


Step 1 :

In a bowl mix gram flour, lemon juice, sugar, salt and turmeric. Add water gradually to make it into a smooth batter. Make sure the consistency of the batter is neither thick nor thin. Add the dissolved baking powder to the batter.

Step 2 :

Grease the steaming tin with 2 drops of oil and pour the mixture into it. Steam for about 15-20 minutes.


Step 3 :

In a pan, add oil, mustard seeds, curry leaves and red chillies. Let it splutter. Pour the tadka over the prepared dhokla. Cut the dhokla into small squares and serve it hot with tamarind and date chutney or green chutney with chillies, mint and coriander!
