Vegan Filter Coffee & Chocolate Chia Seed Mousse

Chia seeds: ½ cup
Coconut milk: 1 ½ cups
Water: ½ cup
Maple syrup or jaggery syrup: ½ cup
Strong filter coffee decoction: 2 ½ tablespoons
Vanilla extract: 1 tablespoon
Cocoa powder: ¼ cup
Salt: 1 pinch
Step 1 :
Sift the cocoa into a bowl. Pour in the filter coffee along with the coconut milk, water, maple syrup, salt and vanilla. Stir together. Add the chia seeds to the cocoa mixture and mix till well-combined. Cover and refrigerate overnight.
Step 2 :
In a high-speed blender, combine the cocoa mixture with the well-soaked chia seeds till smooth. Pour the resultant chocolate mousse into glasses and refrigerate for at least 3 hours till it is well set. Garnish with some grated vegan dark chocolate and enjoy!
