Banana: 1 approx. 85 grams
Jaggery: 45g
Whole wheat flour: 3/4 cup
Brown rice flour: 1/4 cup
Baking powder: 1 1/2 tsp.
Cardamom powder: 1 pinch
Salt as per taste
Coconut oil:1 1/2 tbsp
Coconut milk: 3/4 cup
Preparation
Step 1 :
Mash the banana in a bowl. Sprinkle in the jaggery and mix till fully combined. Pour in the milk/coconut milk and one tablespoon of ghee/coconut oil.
Step 2 :
Add in the whole wheat flour, rice flour, baking powder, cardamom powder and salt. Mix till combined. Ensure it is the same consistency of dosa or pancake batter.
Step 3 :
Rub the extra ghee/coconut oil in a paniyaram chatti and put it on medium flame. Pour in the batter till each mould is 3/4th full.
Step 4:
Cover with a lid and cook for a few mins until the batter becomes golden brown. Then with a toothpick or skewer, overturn them so that they can cook on the top as well.
Once done, remove and place in a serving dish. Enjoy while it’s warm!
