A Healthy, Sweet Breakfast: Overnight Oats with Chia Seeds and Stewed Apples

- Chia Seeds: 2 teaspoon
- Rolled Oats (gluten free): 2 tablespoons
- Coconut Milk: 100ml (half cup)
- Apples: 2 whole
- Coconut Sugar: 15 gm
- Cinnamon: 1/4th teaspoon
- Nutmeg: 1/8th teaspoon
- Lime juice: 1 teaspoon
- Salt: a pinch
Step 1 :
The night before: Pre-soak oats, chia seeds and coconut milk in a glass or bowl. Keep it in the fridge overnight.
Step 2 :
Remove the skin on the apples and cut into small cubes.
Step 3 :
Add cut apples, coconut sugar, cinnamon, nutmeg, lime juice and salt to a pan and mix well.
Cover and cook on medium flame for 10 minutes. The apples will become soft and release its juices. Drizzle this liquid over the overnight oats. Do this if you want to avoid adding additional sweetener to your meal.
Once ready, pour apples over the pre-soaked oats chia mix. Add some roasted nuts and seeds. Enjoy!
