Ingredients list

Walnuts: 100 g

Seedless dates: 120 g 

Grated carrots: 150 g  

Fresh orange juice: 2 tbsp 

Water: 2 tbsp 

Orange zest: 1 tsp

Lemon juice: 1 tsp 

A pinch of salt 

For the topping

Desiccated coconut: 50 g 


Step 1 :

Add the walnuts in the grinder until it is a fine powder. Remove the walnuts from the grinder. Pulse the dates into a paste. Add the walnuts and the remaining ingredients and blend, until it is smooth.

Step 2 :

Scoop the batter with a spoon into the lined cupcake moulds and sprinkle desiccated coconut on top of the cupcakes.

Step 3 :

Refrigerate the cupcakes overnight until the cupcakes are set and serve.
